lechitin egg

Although the Frenchman Maurice Gobley discovered egg lecithin, which he call "lekithos",as early as 1850,lecithin with its many and various functions did not come into its own until the triumphant advance of the soybean. The story of discovery of lecithin goes back to the beginning of the nineteenth century. In 1811 L.N.Vaquelin reported the presence of organically bond phosphorus in fat containing preparations obtained brain matter. In 1846 Gobley iolated from egg-yolk an orange coloured sticky substance with emulsifying properties, wich he named lecithin after "lekithos, the Greek word for egg-yolk
